Fabien Rouillard left the Ritz to open this unassuming corner bakery, and the quality shows in every bite. The croissant is shatteringly crisp and deeply buttery. The madeleines are perfect. The tarte citron is a masterclass. There's no marketing, no Instagram staging — just a craftsman at the top of his game, serving a grateful neighborhood.
