Don’t miss

The signature sourdough miche — the bread that defined a generation

The cathedral of French sourdough — Apollonia Poilâne continues a family legacy of extraordinary bread.

Why we love it

The Poilâne miche — a massive two-kilo wheel of wood-fired sourdough — has been a Paris icon since 1932. Under Apollonia Poilâne, the bakery maintains its exacting standards: natural leavening, stone-ground flour, wood-fired ovens in the basement. The punitions (butter cookies) are dangerously addictive. Buy a quarter-loaf if a whole miche is too much.
