The Poilâne miche — a massive two-kilo wheel of wood-fired sourdough — has been a Paris icon since 1932. Under Apollonia Poilâne, the bakery maintains its exacting standards: natural leavening, stone-ground flour, wood-fired ovens in the basement. The punitions (butter cookies) are dangerously addictive. Buy a quarter-loaf if a whole miche is too much.
