Before Le Chateaubriand, the idea of a no-choice tasting menu in a casual bistro was radical. Iñaki Aizpitarte's cooking remains thrillingly unpredictable — some dishes are sublime, others challenge you, and that's precisely the point. The second-service walk-in at 9:30pm is one of Paris's great dining experiences: show up, queue, and surrender to whatever comes.
